Canning

Okay, so, after much ado, and much trepidation, I decided to make and can, cherry jam.  It was a huge success!  As a child, I watched my grandmother spend countless hours canning, preserving, dehydrating and putting away tons of food.  It was something I was always amazed with, and was somewhat fearful of the outcome.  The drama, it turned out, was not a drama after all.  With 20 some jars behind me, the world of canning is now at my fingertips.  The next phase of the evolution is pressure cooker canning.  Which of course, might happen with a bit more caution and a tad more time involved.  If you have experience with pressure canning, please add to the blog.
